A quick and easy homemade meal featuring smoky bacon, rich BBQ sauce, and melty cheese layered on thick, buttery Texas toast for a comforting and flavorful sloppy joe experience.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 68 slices bacon (thick-cut preferred)
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 3/4 cup (180 ml) BBQ sauce (recommend Sweet Baby Ray’s)
  • 1/4 cup (60 ml) ketchup
  • 1 tbsp (15 ml) Dijon mustard
  • 1 tbsp (15 ml) Worcestershire sauce
  • Salt and freshly ground black pepper, to taste
  • 1 1/2 cups shredded cheddar cheese (about 170 g)
  • 8 thick slices Texas toast
  • 4 tbsp (60 g) butter, softened
  • Optional: jalapeños, smoked paprika, pickles

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes, flipping occasionally. Remove bacon and drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet.
  2. Add chopped onion to the skillet with bacon fat and cook over medium heat for 4-5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
  3. Increase heat to medium-high and add ground beef. Break up meat and cook until browned and cooked through, about 6-8 minutes. Drain excess fat if desired, leaving a little for flavor.
  4. Lower heat to medium and stir in BBQ sauce, ketchup, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well and simmer for 5 minutes to meld flavors and thicken sauce slightly.
  5. Chop cooked bacon into bite-sized pieces. Stir half of the shredded cheddar cheese and all the bacon into the beef mixture. Save the remaining cheese for topping.
  6. Spread softened butter evenly on one side of each Texas toast slice. Place butter-side down on a baking sheet and toast in a preheated oven at 400°F (200°C) for 5 minutes until golden and crisp.
  7. Spoon the beef mixture generously over toasted Texas toast slices. Sprinkle remaining cheddar cheese on top. Return to the oven and broil on low for 2-3 minutes until cheese melts and bubbles.
  8. Serve immediately, optionally garnished with chopped fresh parsley or green onions.

Notes

If the sloppy joe mixture is too runny, simmer a few extra minutes to thicken. If too thick, add a tablespoon of water or beef broth. Use fresh shredded cheese for better melting. Watch cheese carefully when broiling to avoid burning. For gluten-free, substitute Texas toast with gluten-free bread. Bacon fat adds flavor, so leave about a tablespoon in the pan.
