  • 3 to 4 pounds boneless pre-cooked ham roast (spiral-cut preferred)
  • ½ cup packed dark brown sugar (100 g)
  • 1 can (20 oz/567 g) pineapple chunks, drained (reserve ½ cup juice)
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon Dijon mustard (15 g)
  • ½ teaspoon ground cloves (1 g), optional
  • 1 teaspoon garlic powder (3 g)
  • ½ teaspoon freshly ground black pepper (1 g)

Instructions

  1. Remove the ham from packaging and pat dry with paper towels. Trim some fat if desired, but leaving some helps keep it moist. Place the ham flat-side down in the crockpot.
  2. In a mixing bowl, combine brown sugar, reserved pineapple juice, apple cider vinegar, Dijon mustard, ground cloves, garlic powder, and black pepper. Stir until smooth and no lumps remain.
  3. Pour the glaze evenly over the ham, spreading gently with a spoon if needed.
  4. Scatter the drained pineapple chunks around and on top of the ham.
  5. Cover the crockpot and cook on low for 4 to 5 hours. Check after 4 hours for tenderness and that the glaze is bubbling and caramelized.
  6. Carefully lift the ham out and let it rest on a cutting board for 10 minutes before slicing.
  7. Spoon some of the pineapple glaze over the slices before serving.

Notes

If glaze thickens too much during cooking, add a splash of water or pineapple juice to loosen it. Avoid opening the crockpot frequently to maintain cooking temperature. Let ham rest before slicing to lock in juices. Can substitute pineapple with canned peaches or fresh pineapple. For a smoky flavor, add smoked paprika or liquid smoke to the glaze. Can bake in oven at 325°F for 1.5 to 2 hours as an alternative.
