  • 8 large eggs, room temperature
  • 1 cup small-curd cottage cheese
  • 2 cups shredded cheddar cheese (divided: 1 ½ cups plus ½ cup)
  • 1 cup milk (whole or 2%)
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • Optional: diced bell peppers or mushrooms for extra veggies

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large skillet over medium heat, brown the sausage until no longer pink, about 5–7 minutes, breaking it into small pieces. Drain excess fat if necessary.
  3. Ensure thawed hash browns are well drained and pat dry with paper towels to avoid sogginess.
  4. In a large bowl, whisk together eggs, cottage cheese, milk, garlic powder, salt, and pepper until smooth.
  5. Stir in 1 ½ cups shredded cheddar cheese and the finely chopped onion along with any optional veggies.
  6. Fold the browned sausage and hash browns into the egg mixture until well combined.
  7. Pour the mixture evenly into the prepared baking dish and smooth the top with a spatula.
  8. Sprinkle the remaining ½ cup cheddar cheese evenly over the casserole.
  9. Bake uncovered for 45–50 minutes, or until the casserole is set in the center and the top is golden brown. A toothpick inserted should come out clean.
  10. Let the casserole cool for 5–10 minutes before slicing and serving.
