A warm, satisfying breakfast casserole featuring layers of eggs, cheese, sausage, and crispy tater tots, perfect for busy mornings or brunch gatherings.

  • 32 ounces (900 g) frozen crispy tater tots
  • 1 pound (450 g) breakfast sausage, crumbled and cooked
  • 10 large eggs, beaten (room temperature)
  • 1 cup (240 ml) whole milk or half-and-half
  • 2 cups (about 200 g) shredded cheddar cheese, sharp or mild
  • 1 cup (about 150 g) diced bell peppers, mixed colors
  • 1 medium diced onion, finely chopped
  • 2 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • ¼ cup fresh cilantro, chopped (optional)
  • Olive oil or butter, for sautéing veggies and sausage

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. Heat a large skillet over medium heat and cook the crumbled sausage until browned and fully cooked, about 8 minutes. Drain excess grease on paper towels.
  3. In the same skillet, add olive oil if needed, then sauté diced onion, bell peppers, and minced garlic for about 5 minutes until softened. Season lightly with salt and pepper and remove from heat.
  4. In a large bowl, whisk together eggs, milk, ground cumin, chili powder, salt, and pepper until combined and slightly frothy.
  5. Add cooked sausage, sautéed veggies, and 1 ½ cups of shredded cheddar cheese to the egg mixture and stir until well mixed.
  6. Pour the egg and filling mixture into the greased baking dish, spreading evenly. Arrange frozen tater tots in a single layer on top.
  7. Bake for 35-40 minutes until eggs are set and tater tots are golden brown and crispy.
  8. In the last 5 minutes of baking, sprinkle the remaining ½ cup shredded cheddar cheese over the tater tots and bake until melted and bubbly.
  9. Remove from oven and let cool for 5 minutes. Garnish with fresh chopped cilantro before serving.

Notes

If tater tots brown too quickly, loosely cover the dish with foil halfway through baking. Let casserole rest a few minutes after baking for easier slicing. For dairy-free, substitute milk and cheese with plant-based alternatives. Use sharp cheddar for best flavor and melting. Assemble the night before and refrigerate for convenience, adding extra baking time if cold from fridge.
