  • 1.5 pounds (700 g) carrots, peeled and cut into sticks or chunks
  • 2 tablespoons honey (mild, floral like clover recommended)
  • 3 tablespoons unsalted butter, softened
  • 2 teaspoons fresh thyme, finely chopped
  • 1 tablespoon olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 1.5 pounds (700 g) of carrots into evenly sized sticks or chunks, about 3 inches long.
  3. In a small saucepan over low heat, melt 3 tablespoons of unsalted butter. Add 2 teaspoons of fresh thyme leaves and let steep for 3 minutes, stirring occasionally. Remove from heat and strain out thyme bits if desired.
  4. In a large mixing bowl, combine the carrots with 1 tablespoon olive oil, the thyme-infused melted butter, 2 tablespoons honey, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper. Mix well to coat evenly.
  5. Spread the carrots out in a single layer on a rimmed baking sheet, ensuring they have space to roast and not steam.
  6. Roast in the oven for 25-30 minutes, flipping the carrots halfway through (around 15 minutes) for even caramelization.
  7. Check for doneness; carrots should be tender and golden with some charred edges. Roast longer in 5-minute increments if needed.
  8. Serve warm, spooning any extra glaze from the pan over the carrots.

Notes

Use fresh thyme for best flavor; dried thyme can be substituted but will be milder. To avoid honey burning, roast at high heat and flip carrots halfway through. For dairy-free, substitute butter with almond butter or coconut oil and honey with maple syrup or agave nectar. Avoid overcrowding the pan to prevent steaming.
