  • 2 large eggs, room temperature
  • 1 ½ teaspoons pure peppermint extract
  • 1 teaspoon vanilla extract
  • 2 cups (340 g) mint chocolate chips
  • Green food coloring (optional, a few drops)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened unsalted butter, granulated sugar, and light brown sugar using an electric mixer on medium speed until fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the peppermint extract and vanilla extract. Add a few drops of green food coloring if desired and mix until evenly tinted.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed just until combined. Avoid overmixing.
  6. Using a spatula, gently fold in the mint chocolate chips, making sure they’re evenly distributed without smashing.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes until cookies are golden around the edges but still soft in the center.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
