Creamy Boursin Cheese Pasta Recipe with Sweet Cherry Tomatoes

A quick and easy creamy pasta dish featuring garlic & herb Boursin cheese and roasted sweet cherry tomatoes, perfect for cozy dinners and family gatherings.

  • 12 oz (340 g) pasta (penne, fusilli, or farfalle)
  • 8 oz (225 g) garlic & herb Boursin cheese
  • 2 cups (300 g) sweet cherry tomatoes, halved
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • A handful fresh basil, chopped
  • ¼ cup (25 g) grated Parmesan cheese (optional)
  • Salt and freshly cracked black pepper, to taste
  • A pinch red pepper flakes (optional)
  • ½ cup (120 ml) reserved pasta cooking water or vegetable broth

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz pasta and cook according to package instructions until al dente, about 8–10 minutes. Reserve ½ cup pasta water before draining.
  2. Preheat oven to 400°F (200°C). Toss halved cherry tomatoes with 2 tablespoons olive oil, a pinch of salt, and freshly cracked black pepper. Spread on a baking sheet and roast for 15 minutes until soft and slightly caramelized.
  3. In a large skillet over medium heat, warm a tablespoon of olive oil. Add minced garlic and sauté for 1–2 minutes until fragrant but not browned.
  4. Add roasted cherry tomatoes to the skillet and stir gently to combine.
  5. Reduce heat to low and add Boursin cheese. Stir continuously until cheese melts into a creamy sauce. If sauce is too thick, slowly add reserved pasta water a tablespoon at a time until desired consistency is reached.
  6. Drain pasta and transfer directly into the skillet. Toss to coat pasta evenly with sauce and tomatoes. Add red pepper flakes if desired.
  7. Remove from heat and stir in chopped fresh basil and grated Parmesan cheese. Season with salt and pepper to taste.
  8. Serve immediately, garnished with extra basil leaves and a drizzle of olive oil if desired.

Notes

Reserve pasta water to adjust sauce consistency. Roast tomatoes to enhance sweetness and flavor. Avoid overcooking garlic to prevent bitterness. Use low heat when melting Boursin cheese to avoid curdling. Serve immediately for best texture.
