  • 1 cup freshly grated parmesan cheese
  • Juice of 1 large lemon (about 3 tablespoons)
  • 8 ounces fettuccine or linguine pasta
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of fettuccine or linguine and cook according to package instructions until al dente (about 10-12 minutes). Reserve ½ cup of pasta water before draining. Set pasta aside.
  2. While pasta cooks, season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until golden and cooked through (about 5-7 minutes). Remove chicken from pan and set aside.
  3. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic. Stir frequently and cook until fragrant but not browned (about 1-2 minutes).
  4. Pour in chicken broth and heavy cream. Bring to a gentle simmer. Gradually stir in parmesan cheese until melted and smooth. Add lemon juice and stir to combine. Season with salt and pepper to taste.
  5. Return cooked chicken to the skillet. Add drained pasta and toss to coat everything in the sauce. Use reserved pasta water a little at a time if sauce seems too thick.
  6. Let everything cook together for an additional 2 minutes to marry the flavors. Sprinkle with chopped parsley if desired. Serve immediately.

Do not overcook the chicken to keep it juicy. Avoid burning garlic by cooking on medium heat and stirring frequently. Adjust sauce consistency with reserved pasta water.
