Creamy Marry Me Chicken Recipe with Sun-Dried Tomatoes

A quick and easy creamy chicken dish featuring sun-dried tomatoes, garlic, and a rich parmesan cream sauce. Perfect for weeknights, date nights, or family gatherings.

  • 4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil; rehydrate if dry-packed)
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml; substitute half-and-half for lighter option)
  • ½ cup freshly grated Parmesan cheese (50 g)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Small handful fresh basil, chopped
  • Fresh parsley, chopped (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil. When the oil shimmers, add the chicken breasts and cook for 5–6 minutes without moving to develop a golden crust.
  3. Flip the chicken and cook for another 5 minutes or until the internal temperature reaches 165°F (74°C). Remove chicken from the pan and set aside on a warm plate.
  4. Reduce heat to medium and add butter to the same skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Stir frequently and cook for 1–2 minutes until fragrant.
  5. Pour in chicken broth, scraping the bottom of the pan to loosen browned bits. Let simmer for 2–3 minutes to reduce slightly.
  6. Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Continue stirring until the cheese melts and the sauce thickens, about 3–4 minutes.
  7. Return the chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the chicken and cook together for 2 more minutes to combine flavors.
  8. Sprinkle chopped basil and parsley over the top just before serving.

Notes

If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it. If too thin, simmer a bit longer but watch carefully to avoid burning. Use room temperature chicken for even cooking. Avoid overcrowding the pan to get a nice crust. Fresh garlic is essential for best flavor. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast.
