A quick and comforting one-pot dinner featuring spicy Italian sausage, rigatoni pasta, and a creamy tomato sauce that comes together in under 30 minutes.

Ingredients

Scale
  • 1 pound Italian sausage, casings removed (spicy or sweet)
  • 12 ounces rigatoni pasta, uncooked
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 1/2 cups chicken broth (low sodium preferred)
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (or dried basil)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil over medium-high heat in a large deep skillet or wide pot. Add the sausage, breaking it up with a spoon. Cook for 5-7 minutes until browned and cooked through. Drain excess fat if desired.
  2. Lower heat to medium. Add chopped onion to the sausage and cook for 3-4 minutes until translucent and slightly golden. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Stir to combine. Add rigatoni pasta, pressing it down gently so it’s mostly submerged in the liquid. Bring to a boil.
  4. Reduce heat to a simmer and cover with a lid slightly ajar. Cook for about 15 minutes, stirring occasionally to prevent sticking, until pasta is tender and most liquid is absorbed.
  5. Remove lid and stir in heavy cream and grated Parmesan cheese. Stir continuously for about 2 minutes until sauce is creamy and coats the pasta. Season with salt, black pepper, and red pepper flakes if using. Adjust seasoning to taste.
  6. Remove from heat and sprinkle chopped fresh basil on top. Let rest for 1-2 minutes before serving.

Notes

If sauce is too thick after adding cream, add a splash of chicken broth or water to loosen. Stir frequently during simmering to prevent pasta from sticking. Use fresh sausage for best flavor. For gluten-free, substitute rigatoni with gluten-free penne or ziti. Add cream at the end to avoid curdling.
