A quick and easy appetizer featuring whipped feta cheese blended with cream cheese and olive oil, topped with sweet roasted cherry tomatoes and fresh basil on toasted baguette slices. Perfect for entertaining or a light bite with big flavor.

  • 2 ounces (60g) cream cheese, softened
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • 1 pint (about 300g) cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried oregano or Italian seasoning (optional)
  • Baguette or rustic Italian bread, sliced into 1/2-inch (1.3cm) thick slices
  • Fresh basil leaves, torn or chiffonade (about 1/4 cup)
  • Extra olive oil for drizzling
  • Optional: a drizzle of balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a bowl, toss the halved cherry tomatoes with 1 tablespoon olive oil, salt, pepper, and dried oregano if using. Spread them cut side up on the baking sheet in a single layer.
  3. Roast the tomatoes in the oven for 20-25 minutes until softened, slightly shrunk, and blistered. Watch closely during the last 5 minutes to avoid burning.
  4. While tomatoes roast, combine crumbled feta, softened cream cheese, 2 tablespoons olive oil, lemon juice, and black pepper in a mixing bowl or food processor. Whip until smooth and fluffy, about 2-3 minutes.
  5. Slice the baguette into 1/2-inch pieces. Arrange on a baking sheet, brush lightly with olive oil, and toast in the oven at 400°F for 5-7 minutes until golden and crisp. Alternatively, use a grill pan or toaster oven.
  6. Spread a generous dollop of whipped feta onto each toasted bread slice. Top with roasted cherry tomatoes and some of their juices.
  7. Garnish with fresh basil leaves, drizzle with extra olive oil, and add a touch of balsamic glaze if desired.

Notes

If the whipped feta is too thick, add a splash of milk or olive oil to loosen it. Roasted tomatoes can be made ahead and refrigerated up to 3 days. Toast bread just before assembling to prevent sogginess. For gluten-free, use gluten-free bread or crackers. For dairy-free, substitute vegan cream cheese and vegan feta alternatives.
