  • 2 cups (200 g) shredded white cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese
  • 1 cup (240 ml) whole milk
  • 4 oz can (115 g) diced green chilies, drained
  • 1 clove minced garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: jalapeño slices or a pinch of cayenne pepper for heat
  • Optional: fresh cilantro for garnish

Instructions

  1. Grate the white cheddar and Monterey Jack cheeses using a fine grater and set aside.
  2. Soften the cream cheese by leaving it out at room temperature for about 30 minutes or cut into small cubes to speed melting.
  3. Pour 1 cup (240 ml) whole milk into a medium saucepan over medium heat and warm gently until hot but not boiling, about 3-4 minutes.
  4. Stir in the softened cream cheese cubes and whisk continuously until fully melted and smooth, about 3-5 minutes. Avoid high heat.
  5. Add minced garlic, ground cumin, onion powder, salt, and black pepper. Stir well to combine.
  6. Gradually add shredded cheddar and Monterey Jack cheeses in batches, stirring constantly to avoid clumping. This takes about 5-7 minutes.
  7. Fold in the drained diced green chilies gently to distribute evenly.
  8. Adjust consistency by adding a splash of milk if too thick or cooking longer on low heat if too thin.
  9. Taste and adjust salt or pepper as needed. Add jalapeño slices or cayenne for extra heat if desired.
  10. Transfer to a heat-safe bowl and serve warm with tortilla chips, fresh veggies, or warm tortillas.

Notes

Keep heat low and stir often to prevent grainy texture. Use freshly shredded cheese for best melt. Soften cream cheese fully before melting. Warm milk before adding cream cheese to blend smoothly. For longer serving, keep dip warm in a slow cooker or warming tray and stir occasionally.
