  • ½ cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 to 2 teaspoons sriracha
  • 1 teaspoon honey or maple syrup

Instructions

  1. Rinse and pat dry shrimp thoroughly; leaving tails on is optional.
  2. Set up dredging stations: mix flour and cornstarch in one bowl, beat eggs in a second bowl, and place panko breadcrumbs on a plate.
  3. Dip each shrimp first in flour mixture, shake off excess, then in beaten eggs, and finally coat with panko breadcrumbs, pressing lightly.
  4. Preheat air fryer to 400°F and run empty for 3 minutes.
  5. Arrange shrimp in a single layer in the air fryer basket, spray lightly with cooking oil.
  6. Air fry shrimp at 400°F for 8-10 minutes, flipping halfway and spraying again if needed, until golden and crispy.
  7. While shrimp cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  8. Toss cooked shrimp gently in the creamy spicy sauce until evenly coated.
  9. Garnish with chopped green onions, sesame seeds, or cilantro and serve immediately.

Do not overcrowd the air fryer basket; cook shrimp in batches if needed to maintain crispiness. Pat shrimp dry thoroughly before breading to avoid soggy coating.
