Instructions

  1. Peel and cut 2 medium sweet potatoes into ½-inch thick fries, aiming for uniform size (about 10 minutes).
  2. Place the cut fries in a large bowl of cold water and soak for 20-30 minutes to remove excess starch.
  3. Drain and pat the fries completely dry using clean kitchen towels or paper towels.
  4. Toss the dried sweet potato fries with 2 tablespoons olive oil, 1 teaspoon paprika, ½ teaspoon garlic powder, 1 teaspoon salt, and ¼ teaspoon black pepper in a bowl until evenly coated.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Arrange the fries in a single layer in the air fryer basket, avoiding overcrowding. Cook for 15-18 minutes, shaking or tossing halfway through for even browning.
  7. While fries cook, blend 1-2 finely chopped chipotle peppers in adobo sauce with ¼ cup mayonnaise, 1 tablespoon fresh lime juice, and 1 teaspoon honey until smooth and creamy. Adjust heat or sweetness to taste.
  8. Once fries are golden and crispy, transfer to a serving dish. Garnish with fresh cilantro if desired and serve immediately with the smoky chipotle sauce.
