  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning mix (or homemade blend of chili powder, cumin, paprika, and oregano)
  • 1 cup salsa or diced tomatoes with green chilies
  • 1 cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef or chicken broth
  • 68 corn tortillas, cut into strips or triangles
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon smoked paprika (optional)
  • Salt to taste
  • Optional garnishes: fresh cilantro, diced avocado or guacamole, fresh lime wedges, extra shredded cheese or crumbled queso fresco

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and chopped onion, breaking up the meat with a spatula. Cook until beef is browned and onions are translucent, about 7-8 minutes. Add minced garlic and cook another minute until fragrant.
  3. Sprinkle taco seasoning over the meat mixture and stir well to coat. Pour in salsa and broth, simmer for 3-4 minutes to combine flavors and reduce slightly. Remove from heat and stir in sour cream and half of the shredded cheese until creamy but not runny.
  4. Toss tortilla strips with olive oil, smoked paprika, and salt. Spread evenly on a baking sheet and bake for about 8 minutes until golden and crisp, turning halfway through.
  5. In a baking dish, spread the creamy meat mixture evenly. Sprinkle remaining cheese on top, then layer the golden tortilla strips over the cheese. Bake uncovered for 15-20 minutes until cheese is bubbly and topping is crispy. Let rest for 5 minutes before serving.

Brown the meat well for depth of flavor. Stir in sour cream off heat to avoid curdling. Toss tortilla strips with oil and paprika ahead for better crispness. Moderate layer of tortilla strips crisps better and avoids sogginess. Let casserole cool before serving to help layers hold. For extra crunch, toast tortilla strips separately before layering. Adjust seasoning if using store-bought taco seasoning as it can be salty. To keep topping crispy when reheating, avoid microwaving and re-crisp tortilla strips separately if needed.
