Crispy Asparagus Tart with Herbed Cream Cheese

A quick and easy tart featuring a flaky puff pastry base topped with tangy herbed cream cheese and fresh roasted asparagus, perfect for spring and summer meals.

  • 1 sheet puff pastry (about 8 oz / 225 g), thawed but cold
  • 1 bunch asparagus (about 1 lb / 450 g), trimmed and snapped to remove woody ends
  • 8 oz cream cheese, softened to room temperature
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • Zest of 1 lemon
  • 1 small garlic clove, minced (optional)
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper, to taste
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Snap off the woody ends of the asparagus, toss with olive oil, salt, and pepper. Spread on the baking sheet and roast for 8–10 minutes until just tender but still crisp. Remove and let cool slightly.
  3. In a medium bowl, beat together softened cream cheese, dill, chives, lemon zest, minced garlic, salt, and pepper until smooth and fluffy.
  4. On a lightly floured surface, roll out the thawed puff pastry sheet into a roughly 10×10 inch square. Transfer to the lined baking sheet. Score a 1-inch border all around the pastry without cutting through.
  5. Evenly spread the herbed cream cheese inside the scored border, avoiding the edges.
  6. Arrange the roasted asparagus spears over the cream cheese in a single layer.
  7. Brush the exposed puff pastry border with the beaten egg to give a golden finish.
  8. Bake the tart for 20–25 minutes until the pastry is golden, crisp, and puffed up, and asparagus tips are slightly caramelized.
  9. Let the tart cool for 5 minutes on the baking sheet before slicing and serving.

Notes

Keep the cream cheese chilled until just before spreading to avoid soggy crust. Roast asparagus first to remove excess moisture. Score the pastry edges carefully to allow puffing without leaking. Use egg wash for a golden crust. If puff pastry bubbles under the cream cheese, prick bubbles with a fork to release steam.
