These crispy bacon-wrapped chicken bites with a spicy jalapeño cream cheese filling are perfect for quick, flavorful party snacks that everyone will love.

  • 1 pound chicken breast, cut into 1-inch cubes
  • 10 slices thin-cut bacon, cut in half
  • 3 medium jalapeños, seeded and finely chopped
  • 4 ounces cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Cut chicken breast into 1-inch cubes. Toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. In a separate bowl, combine softened cream cheese with finely chopped jalapeños.
  4. Spread about 1/2 teaspoon of the jalapeño-cream cheese mixture on one side of each chicken cube.
  5. Wrap each chicken cube with a half slice of bacon, securing with a toothpick if needed.
  6. Place bacon-wrapped chicken bites seam side down on the wire rack.
  7. Bake for 20-25 minutes, turning halfway through, until bacon is golden and crispy and chicken juices run clear.
  8. Optional: Broil for 1-2 minutes if bacon needs extra crispiness, watching carefully to avoid burning.
  9. Remove toothpicks, garnish with fresh cilantro or parsley if desired, and serve immediately.

Notes

Use a wire rack to keep bacon crispy by allowing fat to drip away. If bacon cooks faster than chicken, tent bites loosely with foil. For milder heat, remove jalapeño seeds and ribs. Reheat leftovers in oven at 350°F for 8-10 minutes to maintain crispiness. Can be prepared ahead and refrigerated up to 24 hours before baking.
