  • 4 slices American or cheddar cheese (optional)
  • 4 soft burger buns (brioche or potato buns recommended)
  • 2 tbsp (28 g) unsalted butter
  • Vegetable oil or high-smoke-point oil for greasing the griddle
  • Optional toppings: sliced pickles, thinly sliced onions, lettuce, tomato, ketchup, mustard, mayo

Instructions

  1. Preheat the Blackstone griddle to medium-high heat (around 400°F/204°C) until sizzling hot, about 5 minutes.
  2. Divide the ground beef into 4 equal portions and gently roll each into a loose ball without overworking the meat.
  3. Melt the unsalted butter in a small saucepan over medium heat, stirring often until it turns golden brown and smells nutty (3-5 minutes). Remove from heat.
  4. Brush the insides of the burger buns with the browned butter and set aside.
  5. Lightly oil the griddle surface. Place each beef ball on the griddle and immediately smash down firmly with a spatula or burger press to about 1/4 inch (6 mm) thickness. Hold for 10 seconds to form a crust.
  6. Sprinkle salt and pepper on the patties right after smashing.
  7. Cook the patties without moving for 2-3 minutes until edges are crisp and brown. Scrape underneath to ensure the crust releases easily, then flip.
  8. Place a slice of cheese on each patty immediately after flipping. Cook for another 1-2 minutes until cheese melts and patties are cooked through.
  9. Toast the browned buttered buns on the griddle, cut side down, for about 1 minute until lightly toasted and golden.
  10. Assemble the burgers by placing patties on the bottom buns, adding desired toppings, and crowning with the top buns.

Notes

Do not press down on patties after flipping to preserve juiciness. Keep the griddle hot and lightly oiled to prevent sticking. Brown butter carefully to avoid burning.
