  • 4 tablespoons unsalted butter, softened
  • 10 oz mini marshmallows (about 4 cups)
  • 1 teaspoon pure vanilla extract
  • Optional: Food coloring gel or natural color drops

Instructions

  1. Lightly grease an 8×8-inch baking pan with nonstick spray or line it with parchment paper, leaving some overhang for easy square removal later. Set aside.
  2. In a large microwave-safe bowl, combine 4 tablespoons softened unsalted butter. Microwave on high for 30 seconds until melted and bubbly but not browned.
  3. Immediately add 10 oz mini marshmallows to the melted butter. Stir to combine.
  4. Microwave the butter-marshmallow mixture for 1 minute, then stir vigorously. If marshmallows aren’t fully melted, microwave in 15-second bursts, stirring after each, until smooth and glossy (about 1.5 to 2 minutes total).
  5. Add 1 teaspoon pure vanilla extract to the melted marshmallow mixture and stir well.
  6. Immediately pour 6 cups Toast Crunch Cereal into the marshmallow mixture. Using a spatula, gently fold the cereal in until every piece is coated, being careful not to crush the cereal pieces.
  7. Pour the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture firmly and evenly into the pan without pressing too hard.
  8. Let the squares cool at room temperature for at least 30 minutes to set. Alternatively, chill in the fridge for 15 minutes to speed up setting.
  9. Use the parchment paper overhang to lift the block out of the pan. Slice into 16 squares with a sharp knife, wiping the blade between cuts for clean edges.

Use fresh cereal for best crispiness. Melt marshmallows in short bursts to avoid graininess. Press mixture gently to keep squares light and crispy. Use parchment paper overhang for easy removal. Store in airtight container at room temperature up to 3 days or freeze up to 1 month.
