A quick and easy breakfast ring made with crescent roll dough, crispy bacon, cheese, and eggs, perfect for brunch or casual gatherings. It features a flaky, buttery crust with a savory, melty filling.

Ingredients

Scale
  • 1 can (8 oz / 227 g) crescent roll dough
  • 68 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese (about 4 oz / 115 g)
  • 3 large eggs, lightly beaten
  • 2 stalks green onions, thinly sliced
  • 2 tablespoons (30 ml) milk
  • Salt and pepper to taste
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Cook the bacon: Fry 6-8 slices over medium heat until crisp but not burnt. Drain on paper towels and crumble into bite-sized pieces. This usually takes about 10 minutes. Set aside.
  3. Prepare the egg mixture: In a mixing bowl, whisk together 3 large eggs, 2 tablespoons (30 ml) milk, salt, and pepper until just combined. Avoid over-beating to keep the texture tender. Stir in the crumbled bacon, 1 cup (115 g) shredded cheddar cheese, and 2 sliced green onions.
  4. Unroll the crescent roll dough: Carefully separate the dough into 8 triangles but don’t separate them fully—keep the perforations intact to help form the ring.
  5. Arrange the dough: On the prepared baking sheet, lay the triangles in a circle with the wide ends overlapping in the center and pointed ends facing outward, forming a ring shape. Press the wide ends together firmly to seal gaps.
  6. Add the filling: Spoon the egg, bacon, and cheese mixture evenly over the wide ends of the dough, leaving about 1/2 inch (1 cm) border around the edges.
  7. Fold the pointed ends: Take each pointed end of the crescent dough and fold it over the filling, tucking it under the wide end to seal the filling inside. This creates a beautiful braided effect and locks in the filling.
  8. Brush the dough: Use a pastry brush to lightly coat the crescent dough ring with 1 tablespoon melted butter. This step gives the crust that golden, crispy finish.
  9. Bake: Place the ring in the preheated oven and bake for 18-22 minutes, or until the crescent roll dough is golden brown and cooked through. The cheese should be bubbling and the egg mixture set but still moist.
  10. Cool and serve: Let the breakfast ring cool for about 5 minutes before slicing. This helps the filling settle and makes serving easier.

Notes

Do not overfill the ring to avoid leaks and uneven cooking. Crisp bacon well and drain to prevent sogginess. Brush dough generously with melted butter for a golden crust. Tent with foil if edges brown too quickly. Use room temperature eggs and milk for even mixing. Can be assembled ahead and refrigerated up to 12 hours before baking.
