  • 4 tbsp (60 g) unsalted butter, softened (divided)
  • 1 small yellow onion, finely chopped
  • 1 tsp garlic powder
  • Salt and black pepper, to taste
  • 3 cups (90 g) cornflake cereal, lightly crushed
  • Optional: 6 strips diced cooked bacon
  • Optional: chopped green onions for garnish
  • Optional: diced jalapeño for a spicy kick

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Thaw the frozen hash browns completely and gently squeeze out any excess moisture using a clean kitchen towel or paper towels.
  3. Sauté the chopped onion in 1 tablespoon of butter over medium heat until translucent, about 5 minutes. Set aside to cool slightly.
  4. In a large bowl, combine thawed potatoes, sautéed onions, shredded cheddar cheese, sour cream, cream of chicken soup, garlic powder, salt, and pepper. Mix gently until just combined.
  5. Transfer the mixture to your greased 9×13 inch (23×33 cm) baking dish and spread it out evenly with a spatula.
  6. Prepare the cornflake topping: In a medium bowl, crush the cornflakes lightly with your hands. Melt the remaining 3 tablespoons of butter and drizzle over the cornflakes. Toss to coat evenly.
  7. Sprinkle the buttered cornflake mixture evenly over the potato casserole.
  8. Bake uncovered for 45-50 minutes until bubbling at the edges and the topping is golden and crisp. If the topping browns too quickly, tent loosely with foil halfway through baking.
