Instructions

  2. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth and slightly frothy.
  3. Grease a 9×13 inch sheet pan with butter or nonstick spray. Lay 8 thick slices of day-old brioche or challah in a single layer, slightly overlapping if needed.
  4. Pour the custard evenly over the bread, pressing down gently to help the bread absorb the liquid. Let sit for about 10 minutes to soak thoroughly (can refrigerate covered for up to 2 hours or overnight).
  5. In a medium bowl, mix cooled toasted pecans with brown sugar and softened butter until crumbly but slightly sticky.
