  • 1 cup buttermilk
  • 1 cup all-purpose flour, seasoned with salt, pepper, garlic powder, and smoked paprika
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 3/4 cup buffalo wing sauce
  • 2 tablespoons butter, melted
  • 1/2 cup blue cheese crumbles (optional)
  • Ranch dressing or blue cheese dressing for dipping
  • Salt and pepper to taste
  • Vegetable oil or avocado oil for greasing the baking tray

Instructions

  1. Marinate the chicken pieces in buttermilk in a large bowl. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  2. In a shallow dish, mix all-purpose flour with 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon garlic powder, and 1 teaspoon smoked paprika.
  3. Beat the eggs in a separate bowl. Place panko breadcrumbs in a third dish.
  4. Remove chicken from buttermilk, letting excess drip off. Dredge each piece in the flour mixture, dip into the beaten eggs, then coat with panko breadcrumbs. Press lightly to adhere.
  5. Preheat oven to 425°F (220°C). Grease a baking sheet or line with parchment paper. Optionally, place a cooling rack inside the baking sheet.
  6. Arrange coated chicken pieces spaced evenly on the baking sheet or cooling rack.
  7. Bake for 18-22 minutes, flipping halfway through, until golden and cooked through (internal temperature 165°F/74°C).
  8. While baking, melt butter in a small saucepan over low heat. Stir in buffalo wing sauce until smooth and combined.
  9. Transfer baked chicken bites to a large bowl. Pour warm wing sauce over and toss gently to coat evenly.
  10. Serve immediately, sprinkled with blue cheese crumbles and alongside ranch or blue cheese dressing for dipping.

Notes

Let the chicken rest a minute after baking before tossing in sauce to keep coating crispy. If sauce is too spicy, add honey or more butter to mellow heat. Use a cooling rack to prevent soggy bottoms. Avoid tossing chicken in sauce before baking to maintain crunch.
