Decadent Cadbury Egg Brownies Recipe with Easy Velvety Ganache

  • 1 cup (225g) unsalted butter, melted
  • 1 ½ cups (300g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 4 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 68 Cadbury Mini Eggs, unwrapped and roughly chopped
  • 1 cup (240ml) heavy cream
  • 8 oz (225g) semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 8×8 inch pan with parchment paper, leaving some overhang to lift the brownies out later.
  2. Whisk together the dry ingredients: sift cocoa powder, flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, whisk the melted butter and sugar until combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. Gently fold the dry ingredients into the wet mixture using a rubber spatula, being careful not to overmix.
  5. Pour half the batter into the prepared pan and spread evenly.
  6. Scatter the chopped Cadbury Eggs over the batter layer.
  7. Top with the remaining batter and smooth the surface.
  8. Bake for 30-35 minutes until edges are set but center is slightly soft; a toothpick should come out with a few moist crumbs.
  9. While brownies bake, heat the cream in a saucepan until it just begins to simmer. Pour over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then stir until smooth. Stir in softened butter.
  10. Let brownies cool for 15 minutes, then pour ganache evenly over the top and spread gently.
  11. Chill brownies in the fridge for at least 1 hour to set ganache.
  12. Use parchment paper edges to lift brownies out and cut into squares. Serve.

Do not overbake to keep brownies fudgy. Fold dry ingredients gently to avoid toughness. Roughly chop Cadbury Eggs for gooey pockets. Prepare ganache while brownies bake to save time. Chill brownies before adding ganache for a glossy finish.
