Instructions

  1. Prepare the Fruit Dippers: Wash and dry all fresh fruit thoroughly. Hull and halve strawberries, slice bananas and apples, chunk pineapple, and wash grapes. Toss apple slices lightly with lemon juice to prevent browning. Arrange the fruit attractively on a large platter or individual serving bowls.
  2. Melt the Chocolate: Place the chocolate chips or chopped chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer — don’t let it boil. Pour the hot cream over the chocolate and let it sit for 2 minutes to soften the chocolate.
  3. Stir to Combine: Gently stir the chocolate and cream mixture with a wooden spoon or silicone spatula until smooth and glossy. Add the softened butter, vanilla extract, and a pinch of sea salt. Stir until everything is fully blended and the fondue is silky. If the chocolate seizes or looks grainy, gently warm the mixture over low heat while stirring continuously.
  4. Transfer to Fondue Pot: Pour the melted chocolate mixture into your fondue pot or a small heatproof serving bowl. Keep warm over a low flame or use a tea light candle beneath the pot to maintain temperature without burning the chocolate.
