  • 1 lb ground pork (lean but not too dry)
  • 4 cups shredded green cabbage (about half a medium head)
  • 1 cup shredded carrots
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 2 green onions, sliced (for garnish)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Prep your veggies: shred 4 cups of green cabbage and 1 cup of carrots. Finely dice 1 small yellow onion and mince 3 cloves of garlic. Grate 1 teaspoon of fresh ginger. Set aside sliced green onions for garnish.
  2. Cook the pork: heat 1 tablespoon oil in a large skillet over medium-high heat. Add 1 lb ground pork, breaking it up with a spatula. Cook for 5–7 minutes until browned and cooked through. Season lightly with salt and pepper. Drain excess fat if necessary.
  3. Sauté aromatics: push the cooked pork to one side of the pan. Add diced onion, minced garlic, and grated ginger to the empty side with a splash of oil if needed. Cook for 2–3 minutes until fragrant and softened.
  4. Add the veggies: stir in shredded cabbage and carrots. Toss everything together and cook for about 5 minutes, stirring frequently. The goal is to soften the cabbage while keeping some crunch. If the pan seems dry, add a splash of water or broth to prevent burning.
  5. Season and finish: pour in 3 tablespoons soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon sesame oil. Toss well to combine. Add red pepper flakes if using. Cook for another 2 minutes to let the flavors meld.
  6. Garnish and serve: remove from heat and sprinkle sliced green onions on top. Serve hot, optionally with steamed rice or cauliflower rice.

Notes

If cabbage releases too much water, tilt the pan and spoon out excess liquid to keep the slaw from getting soggy. Cook on medium-high heat and avoid overcrowding the pan to maintain crisp texture. Drain excess pork fat if needed. For gluten-free, substitute soy sauce with tamari or coconut aminos. Protein swaps include ground turkey, chicken, or tofu for vegetarian options.
