A simple, hands-off slow cooker recipe for tender pulled chicken in a sweet and savory honey garlic sauce, perfect for a customizable sandwich bar.

  • 34 boneless, skinless chicken breasts (about 2 pounds / 900 grams)
  • 1/4 cup (85 grams) honey
  • 1/3 cup (80 ml) low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1/4 cup (60 ml) ketchup
  • 2 tablespoons (30 ml) apple cider vinegar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 810 soft sandwich buns or slider rolls
  • Optional toppings: coleslaw, sliced pickles, fresh cilantro, shredded cheese

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, ketchup, apple cider vinegar, minced garlic, ground ginger, black pepper, and red pepper flakes if using.
  2. Place chicken breasts in the bottom of the crockpot in a single layer. Pour the honey garlic sauce evenly over the chicken.
  3. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender and shreds easily.
  4. Remove chicken and shred with two forks while warm.
  5. Return shredded chicken to the crockpot and stir to coat in sauce. Let sit on warm for 10-15 minutes.
  6. Toast buns if desired and set up a sandwich bar with pulled chicken and toppings.
  7. Assemble sandwiches with desired toppings and serve.

Notes

For extra saucy chicken, add 1/4 cup water or chicken broth before cooking. If sauce is too thin after cooking, remove chicken and simmer sauce on stove to thicken. Toast buns to prevent sogginess. Leftovers keep well refrigerated up to 4 days or frozen up to 3 months.
