A quick and easy cinnamon roll casserole that delivers gooey, comforting flavors with a smooth cream cheese glaze. Perfect for cozy breakfasts, brunches, and family gatherings.

Ingredients

Scale
  • 1 (16 oz / 450 g) package of refrigerated cinnamon rolls with icing (Pillsbury recommended)
  • 2 large eggs, beaten (room temperature)
  • 1 cup (240 ml) whole milk or dairy-free milk
  • 1 teaspoon pure vanilla extract
  • 4 oz (115 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons (30 ml) milk (for glaze, adjust as needed)
  • 1/2 teaspoon vanilla extract (for glaze)
  • Optional toppings: chopped pecans or walnuts, cinnamon sugar sprinkle

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Lightly grease a 9×13 inch (23×33 cm) baking dish with butter or non-stick spray.
  2. Open the package of refrigerated cinnamon rolls and cut each into quarters. Spread pieces evenly in the baking dish.
  3. In a medium bowl, whisk together beaten eggs, whole milk, and vanilla extract until smooth to make the custard mixture.
  4. Pour custard mixture evenly over cinnamon roll pieces. Gently press pieces down with a spatula or spoon to soak. Let sit for 10 minutes.
  5. Sprinkle optional cinnamon sugar or chopped nuts over the top if desired.
  6. Bake uncovered for 35-40 minutes until puffed, golden on top, and slightly gooey in the center. A toothpick inserted should come out with a few moist crumbs.
  7. While baking, prepare the cream cheese glaze by beating softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy. Adjust milk for desired consistency.
  8. Let casserole cool for 5-10 minutes after baking, then drizzle glaze generously over the top. Serve warm.

Notes

Let the cinnamon roll pieces soak in the custard mixture for at least 10 minutes for perfect texture. Keep cream cheese at room temperature for smooth glaze. Watch baking time closely to avoid overbaking. You can prepare the casserole ahead and refrigerate before baking. Adjust sweetness of glaze by reducing powdered sugar or adding extra vanilla.
