  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 3 tablespoons honey
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt, divided
  • ½ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together honey, lemon juice, lemon zest, minced garlic, olive oil, black pepper, and optional red pepper flakes until glossy and fragrant.
  3. Pat salmon fillets dry with paper towels. Sprinkle ½ teaspoon salt evenly over the fillets and place them skin-side down on the prepared baking sheet.
  4. Trim woody ends off asparagus. Toss asparagus lightly with a drizzle of olive oil and a pinch of salt, then arrange around the salmon fillets on the baking sheet.
  5. Generously coat the top of each salmon fillet with the honey lemon glaze using a spoon or brush.
  6. Bake in the oven for 12 to 15 minutes until salmon flakes easily with a fork and has a slight caramelized sheen. Asparagus should be tender but still crisp.
  7. Optional: Broil for the last 1-2 minutes for a crispier glaze, watching carefully to prevent burning.
  8. Remove from oven and let salmon rest for 2-3 minutes before serving with roasted asparagus.

Notes

Pat salmon dry before glazing for better caramelization. Adjust baking time for thicker fillets. Optional broil at the end for crispier glaze. Can substitute asparagus with green beans, broccolini, or broccoli. For lower-carb, use sugar-free sweetener but glaze texture may vary.
