  • 1 egg beaten with 1 tbsp water (egg wash)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water (110°F / 43°C), sugar, and yeast. Stir gently and let it sit for 5-7 minutes until foamy.
  2. Make the dough: In a large bowl, whisk together the flour and salt. Add olive oil and the activated yeast mixture. Stir until a shaggy dough forms.
  3. Knead the dough: Lightly flour your work surface and knead the dough for about 8-10 minutes until smooth and elastic.
  4. Let it rise: Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm spot for about 1 hour or until doubled in size.
  5. Prepare the filling: Mix softened cream cheese, chopped dill, lemon zest, and black pepper in a bowl. Set aside.
  6. Roll out the dough: Punch down the dough gently and roll it out into a 12×16 inch (30×40 cm) rectangle on a floured surface.
  7. Assemble the pinwheels: Spread the cream cheese mixture evenly over the dough, leaving a small border. Layer smoked salmon slices evenly on top.
  8. Roll and slice: Starting from the long side, tightly roll the dough into a log. Use a sharp knife or pizza cutter to slice into 1-inch (2.5 cm) thick pinwheels.
  9. Prepare for baking: Place the pinwheels cut-side up on a parchment-lined baking sheet, leaving space between each. Brush tops with egg wash and sprinkle everything bagel seasoning generously.
