Instructions

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium saucepan over low heat, melt 3 tablespoons of unsalted butter until bubbly but not browned (about 2 minutes).
  3. Add 4 cups of mini marshmallows and stir constantly until completely melted and smooth (about 4-5 minutes).
  4. Remove the saucepan from heat and stir in 1 teaspoon peppermint extract and 1 tablespoon instant espresso powder until fully incorporated.
  5. Pour 6 cups of Rice Krispies cereal into the marshmallow mixture and gently fold until each piece is coated evenly.
  6. Let the mixture cool for a few minutes until safe to handle but still pliable.
  7. Lightly grease your hands and scoop out tablespoon-sized portions, rolling them into 1 ½ inch diameter balls. Place on the prepared baking sheet.
  8. Melt 1 cup white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  9. Drizzle the melted white chocolate over the rice krispies balls using a small spoon or piping bag.
  10. Sprinkle crushed candy canes on top while the drizzle is still warm, if desired.
  11. Let the balls sit at room temperature until the white chocolate hardens, about 20–30 minutes, or refrigerate for 10 minutes to speed up setting.
