  • 4 flour tortillas, 8-inch size
  • 1 tablespoon (14 g) unsalted butter
  • 1/4 cup (60 ml) milk (whole or 2%)
  • Salt and pepper to taste
  • Optional extras: diced green chilies or jalapeños, fresh cilantro, cooked breakfast sausage or bacon bits, salsa or hot sauce

Instructions

  1. Crack 6 large eggs into a mixing bowl. Add 1/4 cup (60 ml) of milk, a pinch of salt, and freshly ground black pepper. Whisk until just blended.
  2. Heat a cast iron or non-stick skillet over medium-low heat. Add 1 tablespoon (14 g) of unsalted butter and let it melt slowly without browning.
  3. Pour the egg mixture into the pan. Let sit undisturbed for about 20 seconds, then gently stir with a spatula, pushing eggs from edges to center to create soft folds.
  4. When eggs are halfway cooked but still creamy (about 2 minutes), sprinkle 1 cup (100 g) shredded pepper jack cheese evenly over the eggs. Continue folding gently until cheese melts and eggs are just set.
  5. Warm the flour tortillas on a dry skillet or over the campfire for 30 seconds each side until pliable and slightly toasted.
  6. Lay a warm tortilla flat, spoon a generous amount of cheesy scrambled eggs down the center. Add any optional toppings if desired. Fold in the sides and roll tightly to enclose.
  7. Optionally, place assembled burritos back on the skillet for 1-2 minutes per side to crisp the outside slightly.
  8. Serve immediately while warm.
