  • 3 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons unsalted butter, divided (room temperature)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, thyme)
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme and rosemary, finely chopped (or 1 teaspoon dried each)
  • 1/4 cup chicken broth (60 ml)
  • 1 teaspoon freshly squeezed lemon juice (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat chicken breasts dry with paper towels. Using a sharp knife, carefully butterfly each breast by slicing horizontally almost through but not all the way, so it opens like a book. Set aside.
  3. In a mixing bowl, combine minced garlic, grated Parmesan, shredded mozzarella, chopped parsley, 2 tablespoons softened butter, Italian seasoning, salt, and pepper. Mix well until evenly incorporated.
  4. Spoon the cheese mixture evenly inside each butterflied breast. Fold the chicken back over to close. Secure with toothpicks if needed.
  5. Heat olive oil in a skillet over medium-high heat. When hot, sear the stuffed chicken breasts for about 3 minutes per side until golden brown.
  6. Transfer the skillet or chicken to the oven. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C). If using a baking dish, cover loosely with foil.
  7. While chicken bakes, melt remaining 2 tablespoons butter in a small saucepan over medium heat. Add chopped thyme, rosemary, and chicken broth. Stir and simmer gently for 3-4 minutes until fragrant. Finish with a squeeze of lemon juice if desired.
  8. Remove chicken from oven and let rest for 5 minutes to redistribute juices.
  9. Serve the stuffed chicken breasts drizzled with the warm herb butter sauce.

Butterflying chicken breasts evenly is crucial for even cooking. Searing before baking locks in moisture and flavor. Rest chicken after baking to keep it juicy. Use fresh garlic for best flavor.
