- 1 cup (240 ml) passion fruit juice (fresh or bottled)
- 1 cup (240 ml) orange juice (freshly squeezed preferred)
- 2 tablespoons (30 ml) lime juice (freshly squeezed)
- 1/2 cup (120 ml) light rum
- 1/4 cup (60 ml) dark rum
- 1/3 cup (65 grams) granulated sugar
- 3 packets (about 21 grams) unflavored gelatin powder
- 1 cup (240 ml) water
- Optional: 2 tablespoons (30 ml) grenadine syrup
Instructions
- Pour 1 cup (240 ml) cold water into a medium bowl. Sprinkle 3 packets (about 21 grams) of unflavored gelatin evenly over the surface. Let sit for 5 minutes to bloom.
- In a medium saucepan over low heat, combine 1 cup passion fruit juice, 1 cup orange juice, 2 tablespoons lime juice, and 1/3 cup granulated sugar. Stir gently until sugar dissolves, about 3-4 minutes. Do not boil.
- Remove saucepan from heat. Stir in the bloomed gelatin until fully dissolved and smooth.
- Allow mixture to cool slightly (about 5 minutes), then whisk in 1/2 cup light rum and 1/4 cup dark rum. Stir in 2 tablespoons grenadine syrup if using.
- Ladle the mixture into jello shot cups or silicone molds, filling about 3/4 full. Yields approximately 20-24 shots depending on size.
- Refrigerate for at least 4 hours or overnight until firm and springy to the touch.
- Serve chilled. Pop out of molds or serve directly in cups. Store leftovers covered in refrigerator up to 3 days.
Notes
Do not boil the gelatin mixture to preserve setting power. Bloom gelatin properly before use. Allow mixture to cool before adding alcohol to ensure proper setting. For non-alcoholic version, replace rum with extra orange juice and vanilla extract. Adding a pinch of salt balances sweetness. Chill overnight for best texture and flavor. Store refrigerated and consume within 3 days.
