  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cream cheese or coconut cream (for vegan option)
  • Zest of one medium orange
  • Pinch of salt (optional)

Instructions

  1. Pour 1/4 cup (60 ml) of the orange juice into a small bowl and sprinkle the gelatin evenly over the surface. Let it sit for about 5 minutes to bloom and soften.
  2. In a small saucepan, combine the remaining orange juice (3/4 cup / 180 ml), sparkling water (1/2 cup / 120 ml), and honey or agave syrup (2 tablespoons). Warm over low heat without boiling, about 3-4 minutes, until hot enough to dissolve honey and activate gelatin.
  3. Add the bloomed gelatin to the warm liquid mixture and whisk gently until completely dissolved, about 2 minutes. Stir over low heat if lumps appear until smooth.
  4. Remove from heat. Stir in vanilla extract (1 teaspoon), orange zest, a pinch of salt, and softened cream cheese or coconut cream (2 tablespoons). Whisk until smooth and creamy.
  5. Carefully pour the mixture into silicone gummy molds or a lined small baking pan using a measuring cup with a spout for neatness.
  6. Place molds in the refrigerator for at least 2 hours, preferably 3, until gummies are fully firm and springy to the touch.
  7. Gently pop gummies out of molds and store in an airtight container in the fridge for up to one week.
