A quick and easy chicken recipe featuring a sweet and tangy strawberry basil balsamic glaze that brightens up your dinner table with fresh, bold flavors.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 1 cup fresh strawberries, hulled and sliced (about 150 g)
  • 1/4 cup chopped fresh basil leaves (loosely packed)
  • 1/3 cup balsamic vinegar (80 ml)
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and freshly cracked black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. Let them rest at room temperature for about 10 minutes.
  2. In a skillet, heat 1 tablespoon olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add sliced strawberries, balsamic vinegar, and honey to the skillet. Stir and simmer gently for 5-7 minutes until strawberries soften and the glaze thickens slightly.
  4. Push the glaze to the side or transfer it to a bowl temporarily. Add remaining 1 tablespoon olive oil to the pan and increase heat to medium-high.
  5. Place chicken breasts in the pan and cook undisturbed for 5-6 minutes on the first side to develop a sear. Flip and cook another 5-6 minutes until chicken reaches 165°F (74°C).
  6. Reduce heat to low, add the strawberry balsamic glaze back into the pan, and spoon it over the chicken. Let simmer together for 1-2 minutes.
  7. Turn off heat and sprinkle chopped fresh basil over the chicken and glaze. Stir gently to combine without bruising the basil.
  8. Transfer chicken to plates and spoon extra glaze and strawberries over the top. Serve warm.

Notes

If glaze thickens too much, add a splash of water or balsamic vinegar to loosen it. Avoid overcrowding the pan to get a good sear. Rest chicken after cooking to keep it juicy. Use fresh strawberries for best texture and flavor. Simmer glaze gently to avoid bitterness. Add basil at the end to keep flavor bright.
