  • 1 pound (450 grams) ground beef (85% lean preferred)
  • 1 cup (about 170 grams) black beans, rinsed and drained
  • 2 medium jalapeños, thinly sliced
  • ½ medium red onion, finely diced
  • 2 medium tomatoes, diced (Roma or plum preferred)
  • Small bunch cilantro, chopped
  • For the Creamy Three-Cheese Sauce:
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk, warmed (can substitute almond or oat milk for dairy-free)
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • ½ cup Monterey Jack cheese, shredded
  • 1 teaspoon chipotle powder
  • Salt and freshly ground black pepper, to taste
  • Optional toppings: sour cream, sliced black olives, avocado slices, green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown 1 pound (450 grams) of ground beef until no pink remains, about 7-8 minutes. Break it up with a spatula as it cooks. Drain excess fat.
  3. Season the beef with 1 teaspoon chili powder, ½ teaspoon cumin, ½ teaspoon garlic powder, and salt and pepper to taste. Stir in rinsed black beans and cook for 2 more minutes. Remove from heat.
  4. In a medium saucepan, melt 2 tablespoons unsalted butter over medium heat. Whisk in 2 tablespoons all-purpose flour and cook for 1 minute until bubbling but not browned.
  5. Slowly whisk in 1 ½ cups warmed whole milk, stirring constantly to prevent lumps. Cook for 3-4 minutes until thickened, stirring often.
  6. Reduce heat to low and add shredded cheeses: 1 cup sharp cheddar, ½ cup mozzarella, and ½ cup Monterey Jack. Stir until melted and smooth.
  7. Season cheese sauce with 1 teaspoon chipotle powder, salt, and pepper to taste. Keep warm on very low heat, stirring occasionally to prevent skin forming.
  8. On a rimmed baking sheet, spread half the tortilla chips evenly. Spoon half the beef and bean mixture over the chips. Drizzle with half the cheese sauce.
  9. Sprinkle half the diced tomatoes, finely diced red onion, and sliced jalapeños on top.
  10. Repeat layers with remaining chips, beef mixture, cheese sauce, and toppings.
  11. Bake the loaded baking sheet in the preheated oven for 8-10 minutes until the cheese sauce is bubbly and everything is warmed through.
  12. Remove from oven and sprinkle chopped cilantro liberally over the top. Add any optional toppings like sour cream, black olives, or avocado slices.
  13. Serve immediately for maximum crunch.

Notes

If cheese sauce thickens too much while waiting, stir in a splash of milk to loosen it. Remove jalapeño seeds for milder heat. Use sturdy chips to avoid sogginess. Cheese sauce can be made ahead and reheated gently with milk added to restore smoothness.
