  • Butter or oil for cooking

Instructions

  1. Mash the bananas in a mixing bowl until mostly smooth with a few small lumps remain.
  2. Add the egg, milk, and vanilla extract to the mashed bananas and whisk until fully combined and smooth.
  3. In a small bowl or directly into the main bowl, mix rolled oats, flour, baking powder, cinnamon (if using), and salt.
  4. Gently fold the dry ingredients into the wet banana mixture without overmixing.
  5. Preheat a non-stick skillet or griddle over medium heat and add butter or oil to coat the surface.
  6. Scoop about ¼ cup (60ml) of batter per pancake onto the pan. Cook for 2-3 minutes until bubbles form and edges look set, then flip and cook for another 2 minutes until golden brown.
