Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or heavy cream
  • 1 cup strawberries, sliced
  • 1 cup kiwi, peeled and sliced
  • 1 cup blueberries
  • 1 cup mandarin orange segments (fresh or canned, drained)
  • Optional: additional fruits like raspberries, grapes, or mango slices

Instructions

  1. Preheat your oven to 350°F (175°C). Line your round baking pan with parchment paper, letting excess hang over the edges for easy removal later.
  2. In a medium bowl, whisk together 2 ¾ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup softened unsalted butter with 1 ½ cups granulated sugar on medium speed until light and fluffy, about 3 to 4 minutes.
  4. Beat in 1 large room temperature egg and 1 teaspoon vanilla extract until combined, scraping down the sides as needed.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed just until incorporated. Avoid overmixing.
  6. Transfer dough to the lined pan and press evenly into the bottom and slightly up the sides (about ¼ inch thick).
  7. Bake for 15-18 minutes until edges turn golden but center is slightly soft. Remove and cool completely on a wire rack, about 30 minutes.
  8. Beat together 8 ounces softened cream cheese and ½ cup softened butter until smooth and creamy.
  9. Gradually add 2 cups sifted powdered sugar and 1 teaspoon vanilla extract, beating until fully combined. Add 1-2 tablespoons milk or cream if needed to thin.
  10. Spread an even layer of cream cheese frosting over the cooled cookie base.
  11. Arrange sliced strawberries, kiwi, blueberries, and mandarin orange segments over the frosting in a decorative pattern.
  12. Chill the fruit pizza in the fridge for at least 30 minutes before slicing and serving.

Notes

Use room temperature butter and eggs for easier creaming and a softer cookie. Avoid overmixing the dough to keep the cookie tender. Let the cookie cool completely before frosting to prevent melting. Chill before serving for best texture and flavor. You can swap fruits seasonally or make gluten-free and dairy-free adaptations.
