A quick and easy parfait recipe featuring layers of fresh berries, creamy yogurt sweetened with honey and vanilla, and crunchy granola, perfect for brunch or special gatherings.

  • 2 cups (480 ml) Greek yogurt (full-fat preferred, low-fat works too)
  • 3 tablespoons (45 ml) honey
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 cup (150 grams) fresh strawberries, sliced
  • 1 cup (150 grams) fresh blueberries
  • 1 cup (120 grams) fresh raspberries
  • 1 cup (120 grams) fresh blackberries (optional)
  • 1 cup (100 grams) granola (nutty, lightly sweetened recommended)
  • 1/4 cup (30 grams) slivered almonds or chopped walnuts (optional)
  • Fresh mint leaves (for garnish)
  • Edible flowers (optional, for garnish)

Instructions

  1. In a mixing bowl, combine 2 cups (480 ml) of Greek yogurt with 3 tablespoons (45 ml) honey and 1 teaspoon (5 ml) pure vanilla extract. Stir gently until smooth and creamy. Taste and adjust sweetness if needed.
  2. Rinse and pat dry all berries. Hull and slice the strawberries into thin pieces about 1/4 inch thick (6 mm). Keep blueberries, raspberries, and blackberries whole but check for any soft spots and remove them.
  3. Start by spooning about 2 tablespoons (30 grams) of the yogurt mixture into each mini glass or jar to form the base. Follow with a layer of mixed berries (around 2 tablespoons / 30 grams). Next, add a layer of granola (about 1 tablespoon / 15 grams). Repeat the layering process once more, finishing with a generous sprinkle of granola on top.
  4. Finish with a few fresh mint leaves and, if available, edible flowers for a festive touch.
  5. Place the mini platters in the fridge for at least 20 minutes to let the flavors meld and the parfaits chill. Serve chilled.

Notes

Keep granola separate until just before serving to maintain crunch. Use full-fat Greek yogurt for creaminess. Thaw and drain frozen berries thoroughly if using. Assemble parfaits just before serving or store components separately to avoid sogginess.
