A quick and healthy chicken salad featuring creamy Greek yogurt, sweet grapes, and crunchy toasted almonds. Perfect for light lunches, picnics, or potlucks.

  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 cup plain full-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup red seedless grapes, halved
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup finely chopped celery
  • 2 tablespoons chopped fresh parsley or dill (optional)

Instructions

  1. If not using pre-cooked chicken, poach or roast about 2 large chicken breasts (roughly 12 oz raw weight). Let cool completely, then shred or dice into bite-sized pieces.
  2. Heat a dry skillet over medium heat. Add 1/2 cup sliced almonds and stir frequently until golden and fragrant, about 3-5 minutes. Set aside to cool.
  3. In a large bowl, combine 1 cup Greek yogurt, 1 tablespoon Dijon mustard, 1 tablespoon fresh lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Stir until smooth and creamy.
  4. Fold in the shredded chicken, halved grapes, chopped celery, and toasted almonds gently to coat evenly without squishing the grapes.
  5. Taste and adjust salt, pepper, or lemon juice if needed. Add fresh parsley or dill if desired. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve chilled on a bed of leafy greens, in a sandwich, or alongside whole grain crackers.

Notes

Use two forks to shred chicken for tender strands. Toast almonds fresh for best flavor. Fold gently to keep grapes intact. Chilling the salad for at least 30 minutes improves flavor melding. Rotisserie chicken can be used for convenience.
