Fresh Watermelon Feta Mint Salad with Honey Lime Dressing

A refreshing summer salad combining sweet watermelon, salty feta, fresh mint, and a tangy honey lime dressing. Quick and easy to prepare, perfect for hot days or gatherings.

  • 4 cups seedless watermelon, cubed
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons raw or wildflower honey
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon extra virgin olive oil
  • Pinch of salt (optional)
  • Freshly cracked black pepper, to taste

Instructions

  1. Cut about 4 cups (roughly 600 grams) of seedless watermelon into 1-inch cubes and place in a mixing bowl.
  2. Wash, pat dry, remove stems, and finely chop 1/4 cup fresh mint leaves. Set aside.
  3. In a small bowl, whisk together 2 tablespoons honey, 2 tablespoons fresh lime juice, and 1 tablespoon extra virgin olive oil until smooth.
  4. Pour the honey lime dressing over the watermelon cubes and gently toss to coat evenly without mashing the watermelon.
  5. Add the chopped mint and 1 cup crumbled feta cheese to the bowl and toss lightly to combine.
  6. Season with a pinch of salt if needed and freshly cracked black pepper to taste. Toss gently again.
  7. Refrigerate the salad for at least 15 minutes before serving to let flavors meld. Serve chilled or at cool room temperature.

Notes

Keep watermelon chilled before prepping for best refreshment. Avoid adding dressing too far in advance to prevent watermelon from releasing too much juice. Use fresh lime juice and raw honey for best flavor. For dairy-free option, substitute feta with firm tofu or vegan cheese and honey with agave syrup.
