  • 1 cup (200g) granulated sugar
  • 1/2 cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tablespoon espresso powder
  • 1 teaspoon pure peppermint extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips
  • Green food coloring (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, espresso powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then mix in the peppermint extract and green food coloring if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Do not overmix.
  6. Gently fold in the semi-sweet chocolate chips using a rubber spatula.
  7. Spread the batter evenly in the prepared pan and smooth the top.
  8. Bake for 25-30 minutes until bars are golden around the edges and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Cool completely on a wire rack before slicing into squares.
  10. Optional: Dust with powdered sugar before serving.

Notes

Use room temperature eggs and butter for smooth blending. Avoid overmixing after adding flour to keep bars tender. Tent with foil if browning too quickly. Chilling batter for 15 minutes before baking yields thicker bars. Bars can be stored at room temperature for 3 days, refrigerated for up to a week, or frozen for up to 3 months.
