Instructions

  1. Heat 2 tablespoons of butter or olive oil over medium-low heat in a large heavy-bottom skillet or cast iron pan.
  2. Add the thinly sliced onions and a pinch of salt. Stir to coat, then spread them evenly in the pan.
  3. Cook slowly, stirring every 5 minutes to prevent sticking or burning.
  4. After about 20 minutes, sprinkle a pinch of sugar to help with caramelization.
  5. Continue cooking until onions turn deep golden brown and smell sweet, about 10-15 more minutes. Taste and adjust salt if needed.
  6. While onions caramelize, slice tomatoes, red onion rings, and shred lettuce. Arrange pickles, jalapeños, and bacon strips on a platter. Prepare aioli or guacamole if making homemade.
  7. Place caramelized onions in a small bowl with a serving spoon. Arrange all other toppings in separate bowls or plates for easy access.
  8. Grill or pan-fry burger patties seasoned simply with salt and pepper. Add cheese slices on top during the last minute of cooking to melt perfectly.
  9. Toast buns lightly with a bit of butter or oil on the grill pan to prevent sogginess.
  10. Build your burger starting with the patty, then pile on caramelized onions, preferred cheeses, pickles, veggies, sauces, and bacon or avocado. Add cracked black pepper or hot sauce if desired.
