A flavorful and easy-to-make loaded nacho bar perfect for football parties, tailgates, and casual get-togethers. This recipe layers crunchy chips, seasoned ground beef, melty cheese, and fresh toppings for a crowd-pleasing snack.

  • Tortilla chips (sturdy, thick-cut)
  • 1 pound lean ground beef
  • 2 tablespoons homemade taco seasoning (chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, black pepper)
  • 1/4 cup water
  • 2 cups shredded sharp cheddar cheese (about 200g)
  • 1 cup shredded Monterey Jack cheese (about 100g)
  • 1 can (15 oz) black beans, drained and rinsed
  • Fresh jalapeño slices, to taste
  • 3 stalks green onions, thinly sliced
  • 2 medium tomatoes, diced
  • 1/2 cup sliced black olives (optional)
  • Sour cream or Greek yogurt, for dolloping
  • A handful fresh cilantro, chopped
  • 1 ripe avocado or store-bought guacamole
  • 1 small lime, cut into wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook for 7-8 minutes, breaking it apart with a spatula. Drain excess fat if necessary.
  3. Stir in 2 tablespoons of homemade taco seasoning and 1/4 cup water. Simmer for 3-4 minutes until liquid reduces and beef is well-coated.
  4. While beef cooks, dice tomatoes, slice jalapeños and green onions, rinse and drain black beans, and shred cheese if not pre-shredded.
  5. On a baking sheet or oven-safe platter, spread an even layer of tortilla chips. Sprinkle half the shredded cheese over the chips, then evenly distribute the seasoned ground beef and black beans. Add another layer of chips and top with remaining cheese.
  6. Bake in the preheated oven for 8-10 minutes or until cheese is melted and bubbly. Watch carefully to avoid burning chips.
  7. Remove from oven and immediately scatter diced tomatoes, jalapeños, sliced olives, and green onions over the melted cheese. Add dollops of sour cream or Greek yogurt, spoonfuls of guacamole or mashed avocado, and sprinkle chopped cilantro on top.
  8. Serve with lime wedges for squeezing over the nachos.

Notes

Use sturdy, thick-cut tortilla chips to prevent sogginess. Layer cheese both under and over the beef for better melting and binding. Add fresh toppings just before serving to keep chips crispy. For gluten-free, check chip and bean labels. For dairy-free, substitute cheese and sour cream with plant-based alternatives. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in the oven at 350°F for 5-7 minutes.
