These Mint Chocolate Cake Jar Parfaits combine moist chocolate cake with light, fluffy mint frosting, layered in jars for a festive and easy St. Patrick’s Day treat.

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120ml) buttermilk, room temperature (or milk with 1 tsp lemon juice)
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) hot water or brewed coffee
  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 2 tbsp heavy cream or milk
  • 1 tsp peppermint extract
  • Green food coloring (optional)
  • Mini chocolate chips or shaved chocolate (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch baking pan and line with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk buttermilk, vegetable oil, egg, and vanilla extract until blended.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Slowly stir in hot water or brewed coffee until batter is smooth.
  6. Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool cake in pan for 10 minutes, then transfer to a cooling rack to cool completely.
  8. Using a mixer, beat softened butter until creamy. Gradually add powdered sugar alternating with heavy cream. Add peppermint extract and green food coloring if desired. Beat until light and fluffy.
  9. Cut cooled cake into small cubes.
  10. In each jar, layer chocolate cake cubes and mint frosting, repeating until jars are full, finishing with frosting on top.
  11. Garnish with mini chocolate chips and fresh mint leaves.
  12. Refrigerate parfaits for at least 1 hour before serving.

Notes

Sift cocoa powder and flour together to avoid lumps. Do not overmix batter to keep cake tender. Use softened butter for frosting to achieve creamy texture. Chill parfaits before serving to firm frosting and enhance flavors. Cake can be baked a day ahead and assembled later. For dairy-free, substitute coconut oil and almond milk. For gluten-free, use almond flour or gluten-free flour blend.
