  • 34 lbs beef chuck roast
  • 1 packet (about 1 oz) ranch dressing mix
  • 1 packet (about 1 oz) au jus gravy mix
  • 4 tbsp unsalted butter
  • 68 pepperoncini peppers plus 2 tbsp juice
  • 45 medium carrots, peeled and cut into chunks
  • 1.5 lbs baby potatoes, halved if large
  • 1 large yellow onion, sliced
  • 34 garlic cloves, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Peel and chop the carrots into large chunks, halve the baby potatoes if they’re big, slice the onion, and mince the garlic. Set aside.
  2. Pat the beef chuck roast dry with paper towels. Season generously on all sides with salt and pepper.
  3. Spread the sliced onions, carrots, potatoes, and minced garlic evenly on the bottom of the slow cooker.
  4. Place the seasoned roast on top of the vegetables. Sprinkle the ranch dressing mix and au jus gravy mix evenly over the roast.
  5. Dot the butter slices on top, then scatter the pepperoncini peppers around and drizzle 2 tablespoons of their juice over everything.
  6. Cover with the lid and cook on low for 8-9 hours or on high for 4-5 hours until the roast is fork-tender.
  7. Check for doneness. Shred the beef with two forks in the slow cooker or transfer to a platter and slice. Spoon the juices and vegetables over the top and serve.

Notes

Searing the roast before slow cooking is optional but adds extra flavor. Use low heat for best tenderness. Add vegetables halfway through cooking if you prefer them firmer. Leftovers taste better the next day. To thicken sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and cook on high for 15 minutes.
