  • 1 cup (240 ml) heavy cream, cold
  • 1/3 cup (40 g) powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • 1 tbsp fresh lemon juice
  • 12 tsp beetroot powder or a few drops of natural pink food coloring (optional)
  • Fresh strawberries, hulled and halved
  • Raspberries
  • Blueberries
  • Mini shortbread cookies or buttery biscuits
  • Almonds and pistachios, roughly chopped
  • Edible flowers (optional)
  • Honey or berry jam for drizzling (optional)

Instructions

  1. In a mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth (about 2-3 minutes), scraping down the sides as needed.
  2. Mix in the vanilla extract, lemon juice, and powdered sugar, continuing to beat until fully combined. Add beetroot powder or food coloring gradually until the desired blush shade is achieved.
  3. In a separate chilled bowl, whip the cold heavy cream on high speed until stiff peaks form (about 3-4 minutes).
  4. Gently fold the whipped cream into the cream cheese mixture using a spatula with slow, sweeping motions to keep the mixture light and fluffy.
  5. Chill the blush cream slightly in the fridge for about 15 minutes while preparing the fruit: hull and halve strawberries, rinse raspberries and blueberries, and roughly chop nuts.
  6. Spread a generous layer of blush cream across a serving board or platter, leaving spaces for cookies, nuts, and fruit clusters.
  7. Arrange cookies in small piles, scatter berries artistically, sprinkle chopped nuts, and add edible flowers last for color and elegance.
  8. Optionally drizzle honey or berry jam lightly over the board. Cover loosely with plastic wrap and refrigerate if not serving immediately.

Notes

Keep cream cheese and heavy cream cold for easier whipping. Fold whipped cream gently to maintain fluffiness. Slice fruit just before serving to prevent sogginess. Chill the board until serving to maintain texture. For dairy-free version, use vegan cream cheese and coconut cream. Beetroot powder or strawberry puree can be used for natural blush color.
