  • For the buttercream:
  • 1 cup (227g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 23 tbsp (30-45ml) heavy cream
  • 1 tsp pure vanilla extract
  • Gel food coloring (red, blue, green, or team colors)
  • Optional: 2 tbsp cocoa powder (for chocolate buttercream variation)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans with butter and dust with flour or line with parchment paper.
  2. In a medium bowl, whisk together sifted flour, baking powder, and salt. Set aside.
  3. In a mixer bowl, beat softened butter and granulated sugar on medium-high speed until fluffy and pale, about 3-4 minutes.
  4. Add eggs one at a time, mixing well after each addition. Scrape down sides as needed.
  5. Add vanilla and almond extract (if using) and blend until combined.
  6. Reduce mixer speed to low. Add dry ingredients in three parts, alternating with milk in two parts, starting and ending with dry ingredients. Mix each addition just until combined.
  7. Divide batter evenly into prepared pans. Tap pans gently to release air bubbles.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Start checking at 30 minutes.
  9. Cool cakes in pans for 10 minutes, then transfer to cooling racks to cool completely.
  10. To make buttercream, beat softened butter on medium speed until creamy, about 2 minutes.
  11. Gradually add powdered sugar, alternating with heavy cream. Add vanilla extract and beat until light and fluffy, 3-5 minutes. Adjust consistency as needed.
  12. Divide buttercream into bowls and tint with gel food coloring to desired sports theme colors.
  13. Use piping bags fitted with round or star tips to decorate with sports-themed details like balls, stripes, or logos.
  14. Assemble cake by placing one layer on serving plate, spreading a thick layer of buttercream, then adding second layer.
  15. Apply a crumb coat over entire cake and chill for 15 minutes.
  16. Apply final smooth layer of frosting and pipe sports details last.
  17. If buttercream is too soft while decorating, chill for 5-10 minutes. Use an offset spatula dipped in hot water and wiped dry to smooth frosting edges.
