  • 4 lobster tails (about 6 oz / 170 g each), fresh or thawed frozen
  • 6 tablespoons (85 g) unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice, freshly squeezed (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the center.
  2. Using kitchen shears, cut down the top shell of each lobster tail lengthwise, stopping just before the tail fin. Gently pry the shell open and pull the lobster meat up, resting it on top of the shell (piggyback method).
  3. In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme, lemon zest, salt, and pepper. Mix until well blended. Stir in lemon juice now or reserve for later.
  4. Brush the lobster meat generously with about half of the garlic herb butter, saving the rest for basting and serving.
  5. Place the lobster tails on a baking sheet, meat side up. Sprinkle a light dusting of paprika over the meat if using.
  6. Roast in the preheated oven for 12-15 minutes until the meat is opaque and firm, reaching an internal temperature of 140°F (60°C).
  7. During the last 5 minutes of cooking, baste the lobster tails with the reserved garlic herb butter to keep them moist and flavorful.
  8. Remove from oven and let rest for 2 minutes to allow juices to redistribute.
  9. Serve the lobster tails hot with any remaining garlic herb butter melted on the side and a squeeze of fresh lemon juice.

Notes

Use dairy-free butter for a vegan option and dried herbs if fresh are unavailable (reduce quantity by half). Adjust cooking time for lobster tails of different sizes. To add a charred finish, broil for 1-2 minutes at the end, watching carefully to avoid burning. Avoid overcooking to prevent rubbery texture.
